need wiring Harness

I am completely redoing a 1991 Harley Davidson Dyna Glide Sturgis Edition and will be replacing all the wiring due to yrs of splicing (previous owners). I started tearing out the old harness today (what a job). Where is the best place to get a new harness, should I get rid of the circuit breakers and replace with fuses, anything I should change while I have bike torn down? All input is appreciated. This is the 1st bike I have ever worked on.
