Changing seat colour where do I start?

My bike is an 09 Ultra turquoise and cream, done the usual mods for comfort, Performance and looks. Want to kick it up a notch and change the seat, back rest, drivers back rest and speaker box from black to tan which would look wicked cool. Got the idea after looking at a new Indian at Sturgis. Question is how do I do this? Is it better to find a custom shop or do companies like Mustang cater to wants like mine.HD sells one type of seat in brown but nothing else. Anyone else done this recently?

Usually a good upholstery shop or boating cover maker can make you anything you need just using the stock cover as a template.
