2007 Streetglide. Is it possible to tell if the 103" conversion has been done w/o tearing it down? Is there something to look for?

You could go to the dealer service dept so they can run the vin number for service history and also ask if there is any identification on the cylinders that designates size or not.
 
Have a dealer check the VIN as Joel suggests. If that doesn't turn anything up, run a compression test. If the top end was a 96" and converted to 103" CCP will be higher. A 96"er will pump about 180psi but a 103"er will pump about 195psi. That is assuming all other components are stock, i.e., chamber volume, piston dome volume and cam timing.
