Just finished my lizard lights install yesterday. They look great!! The question I have is on the light at the end of the string, Do you cut off the connector or just let it hang??

If the connector is hidden from view then leave it on. The ends of the wires are protected / insulated . No accidental short circuit from exploses wire.

The ideal situation would be if your Lizard lights came apart, then you could terminate the connector internally.
 
I left it on the end when I put mine on and put silicone in the socket. It's not needed if you aren't extending the circuit but worth leaving just in case.

My 10 year old son was riding with me last week for a quick night ride. We passed up some bikes that had neon or LED lighting around the engine. he loved it and is trying to get me to do mine.
