Just go to any cam sight (woods, andrews, t-man, s&s, etc) and look at their cam specs. They will tell you pretty much what their bolt in's are and what requires more work such as springs. Head work will always make the bike run better but it's not a required thing unless you get much more radical than what your looking for. Typical would be the woods 6-6, t-man tr-525 or se255's. Again, go to each site and look for your bolt-in cams.
 
squeek I would not ask how big a cam, but what kind of riding do I do and want I want the cam to do. S/E makes some good cams also, there is a catalog that's downloadable on harley's site. For a touring bike I would not go any larger then the S/E 255. This cam puts out 90+ ft lbs torque @ 2,000 rpm and in a heavy bike thats what you want, that's where you want it at.
